Tortilla Casserole

1 lb ground beef or turkey

12 corn tortillas

Vegetable oil for frying

Ortega taco sauce

1/2 onion, chopped

1 can whole kernel corn

1 to 2 cups grated cheddar or Mexican blend cheese

Thousand Island dressing


Cook 1 lb. of ground beef (or ground turkey). Put into large bowl.

 

Tear a package (12 ct.) of corn tortillas into bite-sized pieces and fry for about 15 seconds in oil. Some of them will be crispy, some a little brown, some still mushy. That is good. Add this to the bowl.

 

Then add about 3/4 jar of Ortega taco sauce, half of an onion (chopped), a can of whole kernel corn, a cup (or two, depending on your taste) of grated cheese (cheddar or mexican blend). And mix it ALL up.

 

When it is all mixed, put some on a plate (or in a bowl) and add some Thousand Island dressing on top and stir it up!

 

I add Tabasco sauce, too!

Sounds weird, I know, but it is very good. And the reason I add the dressing last is because, if there are any leftovers, the dressing is really gross reheated in the microwave.
