Summer Beans

from fishbean


3/4 lb fresh green beans
3/4 lb fresh yellow wax beans
salt to taste
1 TB olive oil
1/4 cup grated Parmesan cheese
1 TB fresh minced parsley
fresh cracked pepper to taste
 

Wash and stem beans. Place in a medium-sized saucepan. Cover with water and add salt. Bring to a boil over high heat.

 

Lower heat and cook for about 3 minutes or until beans are tender but still crisp. Drain and pat dry quickly.


Place in a serving bowl and add remaining ingredients. Stir to coat and serve immediately.
