Pumpkin Cookies

from rhody 

1 cup shortening

2 cup flour
1 cup sugar

1 tsp baking powder
1 cup cooked pumpkin

1 tsp soda
1 tsp vanilla

1 tsp cinnamon
1 egg

1/2 tsp salt
1/2 cup chopped nuts
1 cup raisins
 

Preheat oven to 350F


Cream shortening and sugar, add pumpkin and egg.

 

Sift dry ingredients together and add to mixture.

 

Add nuts, raisins and vanilla.

 

Bake for 10-12 mins. Frost when cool.

 

Caramel Frosting

3 TB butter

4 TB milk
1/2 c brown sugar packed

1 c powdered sugar
3/4 tsp vanilla

Combine butter, milk and brown sugar in saucepan and let boil for two minutes, stirring constantly.

 

Cool.

 

Stir in powdered sugar and vanilla.

 

Beat until smooth and creamy.
