Meatloaf

Preheat
oven to 350ºF.
Meatloaf:
¾ cups Quaker Oats – uncooked *
½ cup finely chopped onion
½ cup finely chopped green bell pepper
¼ cup ketchup
¼ cup milk
1 egg slightly beaten
1 tbsp Worcestershire sauce
2 cloves garlic, finely minced
1 tbsp dried thyme leaves
Salt and pepper to taste
1-1/2 lbs ground beef
Mix together all ingredients except ground beef
Break up
ground beef and add to mixture
Mix
together lightly but thoroughly– you have to use your hands (surgical gloves
help keep the mixture out of your fingernails but it isn’t as much fun)
Spray the
loaf pan lightly with Pam before packing with meat loaf mixture.
Somewhat
firmly, pack the mixture into a loaf pan.
After the loaf is formed, invert the pan onto a cookie sheet or cast iron
skillet. Remove loaf pan.
Prepare
meatloaf sauce
Meatloaf Sauce:
¾ cup ketchup
¼ packed cup of brown sugar
2 teaspoons of prepared mustard
Spread the sauce over the entire meatloaf
Bake 50
to 55 minutes (until meat is not pink in the center)
Let meatloaf stand 5 to 10 minutes before slicing.
* You can substitute the Quaker Oats with ¾ cups toasted bread that is broken up
in tiny pieces. Add the toasted bread to the mixture and mix well before adding
beef.
