Hill Country Peach Cobbler

From a small catering business in Amarillo to their present incarnation in austin, where they've feted British royalty (Prince Charles) and Texas common folk, Gourmet Gals are all over the map. This simple cobbler has an appealing, almost pudding-like consistency. "With the trends in Southwestern cuisine, we've kind of overlooked simplicity," says original Gal Betsy Nozick. 3/4 cup flour
less than 1/8 tsp. salt
2 tsp baking powder
1 3/4 cup sugar
3/4 cup milk
1/2 cup butter
3 cup sliced fresh peaches

Sift flour, salt and baking powder together. Mix with 1 1/2 cups sugar. Slowly stir in the milk.

Melt butter in 8-by-2-by2-inch pan* (a larger pan makes a thinner crust) .

Pour batter over butter; do not stir.

Lay peaches on batter. Sprinkle with 1/4 cup sugar or less.

Bake at 350 degrees F.


Serves 6

* I use a 9" by 13" pan, but it is good baked in the smaller pan also.
