Fruit Salad with Vanilla Bean Syrup

1 vanilla bean or 2 teaspoons vanilla extract
6 tablespoons sugar
1/2 cup fresh orange juice
1 teaspoon grated orange peel
8 cups fresh fruit

1.) Split vanilla bean lengthwise and scrape seeds into a small bowl. Add bean halves, sugar, orange juice and orange peel.

2.) In a saucepan over medium heat, stir the above ingredients until the sugar dissolves. Cook for 5-7 minutes, or until it becomes a light syrup.

3.) Pour the syrup into a large serving container. If you are using vanilla extract instead of the vanilla bean, stir the extract into the syrup at this point.

4.) Cover and refrigerate for 30 minutes, then pour the syrup over fresh fruit.
