Enchilada Casserole

1 1/2 lbs ground beef or turkey

15-18 corn tortillas

vegetable oil

shredded Mexican blend cheese

chopped red onion

1 can enchilada sauce

1 can corn, drained (optional)

 

Cook 1 1/2 lbs. of ground beef (or turkey). Set aside.

 

Tear up about 15-18 corn tortillas into bite-size pieces. Fry these up in some vegetable oil until they are lightly browned. (Some will still be soft, this is OK.) Set aside.

 

In a casserole dish, cover the bottom with half of the tortilla strips, then half of the meat, half of a bag of shredded cheese, chopped red onion, and a can of enchilada sauce. (I try to find the El Pato brand, it is amazing, but Old El Paso will do!)

 

Repeat these layers, making sure that the rest of the cheese is the last thing that goes on.

 

Bake for 15 minutes at 350F.

 

Easy and delicious!
