Chicken, Ham and Rice Casserole

2 cups
cooked rice (I use Calrose long grain white)
2 TB butter (margarine if you prefer)
4 oz. sliced mushrooms (I use brown/crimini mushrooms)
4 green onions, sliced thin, including part of tender green tops
1 1/4 cups milk
2 eggs, beaten
1/4 tsp salt
1/2 tsp fresh minced dill weed
1/4 tsp fresh minced marjoram
2 cups cubed cooked chicken
1 cup cubed cooked ham
2 cups grated Fontina or Swiss cheese
Preheat oven to 350 F. Lightly grease a 2 1/2 quart casserole dish (or a 9 x 9
inch baking dish).
In a saucepan over medium heat, melt butter. Saute mushrooms and onions until
soft. about 5 minutes.
Remove
from heat, whisk in milk, eggs and seasonings. Add chicken, ham, cheese and
rice. Mix well. Pour into casserole.
Cover and
bake until bubbly, 50 minutes.
Serve it with a nice green salad.
