Chicken and Cornbread Stuffing en Crockpot
(because the crockpot is my best friend in the kitchen)

1 1/2 pounds boneless skinless chicken breast halves (could be 3 or four)

Mix together:

1 small box cornbread stuffing mix (or one packet of Mrs. Cubbisons cornbread stuffing mix)
10 ounces fresh or frozen broccoli, chopped (I think you could use asparagus instead but it isn't as inexpensive)
1 can cream of broccoli cheese soup (don't add the water)
1/2 cup chicken broth

Lightly butter a 3 1/2-quart crockpot and place chicken breasts in the bottom.

Place cornbread/broccoli mixture on top of chicken.

Cover and cook on LOW 6 to 7 hours.

I suppose you could bake in an oven but I wouldn't know how long or what temperature.
