Chicken Satay with Peanut Sauce

6 chicken breast filets
1/2 cup soy sauce
1/4 cup lime juice
2 cloves garlic, minced
2 teaspoons curry powder
2 teaspoons ground ginger
1 cup chunky peanut butter
1/2 cup cream or milk
4 small green onions, chopped
2 tablespoons lime juice

Place chicken breasts in a shallow baking pan.

Combine soy sauce, lime juice, garlic, curry powder, and ginger; pour over chicken

Cover and refrigerate for a few hours or overnight

Preheat the oven to 400 degrees F

Remove the chicken from the refrigerator, uncover, and cook in the marinade, basting occasionally, for 45 minutes.

In a saucepan over low heat, stir together peanut butter, cream or milk, onions, and lime juice until blended and heated through

Place chicken breasts on a serving plate or on top of saffron rice and pour peanut sauce over all

Serves 6
