Red Cabbage and Apples

We had a War of 1812 event at the historic site where I work . For the event, we had people in period clothes out in the original 18th century open hearth kitchen, cooking a meal for 30 people on the fire. One of the side dishes was AMAZING, and amazingly easy, and I wanted to share it with you all. It's perfect for fall. I do not have exact measurements, as they did not use them.

1 head of red cabbage, chopped
2 apples, skins off, diced
1 small onion, diced
Apple cider vinegar

Cook onions and apples together with a little bit of apple cider vinegar.

 

When onions are clear and apples begin to get soft, add the cabbage and cook until the cabbage done!

They, of course, used hot coals and fire, but I am sure it will be just as yummy on the stove. Enjoy!

Slice Knockwurst lengthwise and grill until it is scored then add to cabbage mixture.

Serve with baked beans and chunky homemade apple/pear sauce or chunky applesauce and simple pork and beans.

Serve on a plate with a dollop of mustard (your choice).
