Apple Rice

1 cup  uncooked rice
2-1/4 cups apple juice
1/2 apple, chopped
2 tsps butter
1/2 tst salt (optional)

Bring the apple juice to a boil then add the chopped apple and butter.
Add rice and stir a moment.

Turn heat down, cover pan with a lid and simmer for 20 minutes.

Remove from heat and leave covered for another 5 minutes.

I served it with fried chicken breasts and some broccoli I had left over after smearing myself with it to get Clay's attention. (No, it didn't work).

You can use the instructions on any brand of long grain white rice and just substitute apple juice for the liquid.
