Angel Food Cake

1 cup cake flour
1 1/2 cups sugar
2 cups egg whites (usually 13-16 eggs)
1 tsp pure vanilla extract
1/4 tsp pure almond extract
1/4 tsp salt

Preheat oven to 350.


Sift cake flour and 3/4 cup sugar together 3 times. Set aside.

 

Whip egg whites till foamy with mixer. Gradually beat in the rest of the sugar. Add extracts and salt. Beat just until stiff peaks form. Do not overbeat. Remove bowl from mixer.

Fold in flour/sugar mixture by thirds into the egg whites.

 

Place batter in ungreased 10" tube pan.

 

Bake 40-45 minutes or till cake is golden brown and springs back to the touch.

 

Invert the cake until cool.

 

Remove from pan.
